A light, nutritious and refreshing dish that literally "wakes up" the body. This salad is packed with fiber, vitamins, minerals and antioxidants - perfect for detoxing and boosting energy. Make a larger batch and you'll have a healthy lunch for the whole week!
Ingredients (large bowl):
· 2 heads of broccoli (without stems)
· 1 head of cauliflower (without stems)
· 2 and ½ cups grated carrots
· 1/2 cup sunflower seeds
· 1 cup of currants
· 1/2 cup raisins
· 1/2 cup finely chopped fresh parsley
· 4–6 tablespoons lemon juice (to taste)
· Salt and freshly ground pepper
· Pure maple syrup – for a light drizzle before serving
Preparation:
In a food processor (or by hand), chop the broccoli (without stems) into small pieces and transfer to a large bowl. Chop the cauliflower in the same way and add to the bowl. Add the grated
carrots and mix. Stir in sunflower seeds, currants, raisins and parsley.
Add lemon juice, salt and pepper. Before serving, drizzle lightly with maple syrup – it provides the necessary sweetness that balances the taste of the vegetables and lemon.
Tip: Try adding a pinch of cinnamon before serving – it goes surprisingly well with this combination.
