- 60 ml of water
- 60 ml extra virgin olive oil
- 140 g unsalted cashews (soaked for 2 hours)
- 30 g raw cauliflower florets
- 3 tablespoons lemon juice
- 1 teaspoon mustard
- 1 teaspoon coconut sugar or 2 dates
- 1 teaspoon of apple cider vinegar
- 1/4 teaspoon salt
Drain the cashews, then place them in a blender with the other ingredients and blend until creamy for 30 to 60 seconds.
Depending on your taste, you can add cayenne pepper, garlic (fresh or powdered), or chili powder to the mayonnaise.
