Ingredients:
- 100 g green lentils
- 500 g zucchini
- 2-3 cloves of garlic
- 100 ml of olive oil
- juice of 1/2 lemon
- 1 bunch of chives
- salt, pepper
Preparation:
Soak the washed and cleaned lentils in cold water for 2 hours, then cook in the same water, lightly salted, drain and let cool.
Wash the zucchini, cut into rings and sauté briefly in 2 tablespoons of olive oil. Towards the end of the sautéing, stir in the chopped garlic, a little salt and pepper, and leave to cool slightly (just enough to be warm).
Finely chop the lentils and zucchini in a blender and gradually, while stirring, add the olive oil and lemon juice. Finally, stir in the chopped chives and add salt and pepper to taste.
