WHICH SOFTENER TO CHOOSE FOR MILK KEFIR?
Cow's milk is most often used for dairy cultures. It produces a thick liquid kefir. Goat's milk is increasingly used to make kefir. The structure of goat's milk is different from cow's milk, which is why kefir is thinner. Sheep's milk contains more milk sugar and protein than cow's milk, which is why it produces an even thicker and creamier kefir.
Plant milk is suitable for growing some types of dairy cultures. With milk kefir grains, we can also ferment coconut milk, we just have to pay attention to the time needed for the grains to relativize. With kefir grains, it is possible to ferment milk from seeds or nuts, but this type of fermentation is not always successful.
Revitalization time: It is important that when fermenting coconut milk, the kefir grains are revitalized for 24 hours in animal milk. Repeat the process every few days. Lactose-free milk will most likely not be suitable for fermentation. Some types do contain lactose, but also an enzyme that helps people with lactose intolerance digest lactose. These types of milk are usually highly pasteurized, which is not suitable for growing dairy cultures. Lactose can also be separated from the milk using a filter, but this type of milk will have too little food for the bacteria.
