It takes you 40 - 60 minutes for this sweetness of a dish to be enjoyed and hoped to cool down as soon as possible so you can start eating.
Ingredients:
· 1/4 cup olive oil
· 1/2 teaspoon of powdered Ceylon cinnamon
· 1.5 kg of pumpkin, cut into slices
For the dressing:
·1 tablespoon date paste
·2 tablespoons maple syrup
·1 tablespoon soy sauce
·1 teaspoon of powdered Ceylon cinnamon
·juice of 1/2 lemon,
·1/4 cup (60ml) olive oil
For serving:
coconut yogurt, lime slices and
coriander leaves
Preparation:
Preheat the oven to 220°C and line a baking sheet with greaseproof paper. Mix the oil and cinnamon and rub into the sliced pumpkin. Place on a baking sheet and bake for 40 minutes or until soft. While the pumpkin is baking, prepare the dressing by gently stirring until the ingredients are combined.
When it is baked, place the pumpkin on a plate, pour over the dressing and serve with coconut yogurt, coriander leaves and lime.
