An excellent low-calorie substitute for rice.
Ingredients:
- 1 large cauliflower
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Preheat the oven to 180°C. Place half of the cauliflower florets in a blender and add enough water to cover them, cover the blender jar and press the pulse button 4-5 times to chop the florets into small pieces the size of rice. Then strain the chopped cauliflower and repeat the process with the other half. You can also chop the cauliflower in a food processor.
Mix the chopped cauliflower evenly with the olive oil, salt and pepper mixture and spread it on aluminum foil or baking paper. Bake in the oven for 15-20 minutes until tender.
