INGREDIENTS:
- 1 FENNEL
- 1 AVOCADO
- 1 RED ONION
- 2 TBS OF OLIVE OIL
- 1 TSP LEMON JUICE
- SALT AND PEPPER TO TASTE
- 1 HANDFUL OF WALNUT
PREPARATION:
Wash the fennel and cut it into thin slices. I used a food processor (the thinnest blade) because it makes the whole preparation much faster. If you bought the fennel with the stem, use that too. Put it in a bowl and start preparing the dressing.
Peel the avocado, remove the pit and mash it with a fork until you get a creamy texture. Add the red onion that you previously peeled and cut into as small cubes as possible. Add olive oil, lemon juice, salt and pepper. Mix everything together well. You will get a thick, creamy dressing. Add it to the fennel. Sprinkle with the walnuts that you have chopped into small pieces.
Mix well and serve immediately.
