Ingredients:
- 2 cups freshly squeezed carrot juice (480ml)
- medium avocado
- 2 teaspoons chopped fresh ginger
- 1/4 cup fresh coriander leaves
- 1/4 cup fresh parsley leaves
- 1/2 teaspoon salt
For decoration:
- freshly chopped spring onions
- ground black pepper
Preparation:
Squeeze fresh carrot juice using a juicer. You should get 2 cups of juice. Peel and pit the avocado, chop the ginger, and blend all the ingredients in a blender until completely smooth.
Add coriander, parsley, salt and blend everything together again.
