Ingredients:
- 1 and 1/2 cups almond flour
- 1/4 cup fresh lemon juice
- 1/4 cup coconut oil
- 1/4 cup maple syrup or date syrup
- 1/3 cup coconut flour
- 1 tablespoon grated lemon zest (or 4 drops organic lemon essential oil)
- 1/2 teaspoon vanilla powder
- 1/4 cup dried cranberries (coarsely chopped)
Preparation:
Place all the ingredients for the balls (except the cranberries) in a food processor and blend until all the ingredients are well combined into a smooth and thick mixture similar to raw cookie dough.
Add the sliced cranberries and mix them into the mixture evenly by hand. Check to see if the mixture can be formed into balls. Depending on the type of sweetener you use, you may need to let the mixture set in the refrigerator for 10-15 minutes before forming into balls.
Form the mixture into balls by hand and let them set in the refrigerator for about 15 minutes. Keep the balls in the refrigerator until serving, as they will lose their shape after a while at room temperature.
