Ingredients for the dough:
·100 g oat flour
·100 g coconut flour
·1 teaspoon baking powder
·4 tablespoons psyllium husks
·1/2 teaspoon salt
·250 g soy milk
·1/2 cup water
·1 tablespoon apple cider vinegar
Ingredients for hummus filling:
·240 g cooked chickpeas or soybeans
·43 g sun-dried tomatoes (soaked to soften)
·150 g tofu
·2 tablespoons dried basil
·1 tablespoon dried oregano
·1-2 tablespoons tamari
·2 tablespoons lemon juice
·50 g tahini
·30 g nutritional yeast
·3 cloves of garlic
·150 ml of water
Dough preparation:
First, mix the soy milk and apple cider vinegar and let it sit while you prepare the other ingredients.
In a large bowl, mix all the dry ingredients and add the water and curdled soy milk.
Mix everything well, cover and place in the refrigerator for 30 minutes.
Preparing hummus:
Soak the sun-dried tomatoes until soft, then drain and rinse them.
Mix all ingredients in a food processor until well combined into a uniform mixture.
Roll the dough between two sheets of baking paper into a rectangle measuring approximately 28 x 35 cm.
Spread about 365 g of hummus on it and slowly roll it up.
Cut the roll into 12-13 slices and bake in a preheated oven at 170°C for 30 minutes.
