Ingredients:
Sour cherries:
· 400 g of cherries (they should be frozen and then thawed)
·2 teaspoons balsamic vinegar
·1 teaspoon vanilla extract
·pinch of salt
Dry ingredients:
·50 g quinoa flour
·50 g cocoa powder
·65 g ground almonds
·200 g coconut sugar
·2 tablespoons psyllium husks
Wet ingredients:
·140 g peeled zucchini
·1 tablespoon almond butter
·2 fresh dates
·1/4 cup water
·1/2 teaspoon salt
Preparation:
CHERRY:
In a bowl, mix all the ingredients by hand, including the juice that the cherries released during defrosting. Gently crush the cherries with your hands.
Pour the cherries onto the dehydrator foil and dehydrate at 45°C for 5 hours until they become sticky.
BREAD:
Blend the wet ingredients in a blender on high speed until you get a smooth and creamy mixture.
Mix all the dry ingredients in a large bowl, then add the cherries and mix.
Add the blended wet ingredients and mix everything well.
Let the mixture thicken for about 5 minutes, then divide it into two parts and shape them into small loaves.
Dehydrate on a dehydrator shelf for 8 hours at 45°C.
