Zelenarium social club: How to preserve raw food

Autumn fruits are full of flavor and rich in nutrients , and at the new gathering we will talk about how to save leftovers in a simple way . However, our focus will not only be on excess fresh fruit, but also on preserving prepared food that you don't get to eat before it spoils.
WHO IS THE GROUP INTENDED FOR: Regardless of whether you are just starting out in your diet change, are just thinking about it, or are you an experienced raw foodist with many years of experience , everyone finds their place at these groups and likes the concept of socializing and exchanging knowledge and experience . It is not a requirement that you are a participant in one of the workshops or the Little School of Zelenarium.

Welcome to Friday, October 12th at Ver Vita doo. We are hosting Smajo Safić Gupta, a vaidya – a licensed traditional Ayurvedic therapist and doctor who has been working for many years with the desire to bring Ayurveda closer to people in Southeast Europe.
It is an ancient Indian science of health and life, and it can be said that Ayurvedic medicine is the oldest medicine in the world. Ayurveda, as a holistic system of Indian medicine, has been recognized by the World Health Organization (WHO). Ayurveda, on the other hand, speaks its own language and claims that a person is healthy when: all three bodily fluids – doshas (vata-pitta-kapha) and all five elements (fire-earth-ether-air-water) are in balance; when body tissues (dhatu) are properly built and function in a balanced manner; when metabolic processes in the body, i.e. when the digestive fire (agni) is in balance; when the excretion of waste materials (mala – stool, urine, sweat) is in balance; when the spirit is in a state of internal stability and when the senses are balanced.
Western medicine, with its technical and biochemical methods, is invaluable when it is necessary to remove or “repair” disorders caused by injuries or accidents from the body. While classical medicine treats at the cellular level, Ayurvedic traditional medicine tries to help at the very source of the physical condition, i.e. the disease that is in the human soul or consciousness, i.e. based on the characteristics that are often the cause of the disease (the condition itself). Ayurveda can be practiced independently, best as a preventive measure or as a supplement to allopathic treatment.
The workshop itself is focused on the everyday problem of Western man, that most psychological problems arise from a lack of attention, when we allow some external force or some subconscious influence - to control us. The Dharana technique is concentration or correct attention, or the ability to redirect all of our mental energy to the object we are examining. In the fast-paced life we live "today" it is good to improve-train our quality - because our attention in life depends on our state of mind!
Smajo Safić Gupta, a vaidya, comes from an Indian father and a Bosnian mother. He received his education in Ayurvedic medicine as a Gandhian scholar at the Ramakrishna Mission Vivekananda community in the Indian state of Sikkim. He received much practical knowledge from members of the Guni (traditional healers) and Adivasi (Tantric system) communities who are supported by the Indian government for their knowledge of botany and the medicinal properties of plants - from their treasury of knowledge comes today's Ayurvedic pharmacology.
He has been practicing Ayurvedic medicine since 1999, when he founded the Ayur Ashram center, which brings together Ayurvedic experts from India in collaboration in several fields: in joint work, conducting education for therapists and Ayurveda studies, holding workshops and lectures for the public, and promoting recognized natural healing treatments. In his Ayurveda practice, he also uses the knowledge of traditional acupuncture, based on Sushiveda naturopathy.
Due to his dedicated work in Ayurvedic medicine, in 2011 he was awarded a consortium of professional activities from India in accordance with AYUSH norms with the aim of educating Ayurvedic personnel. He is the author of the books Ayurvedic medicine for physical, mental and spiritual health ISBN 978-961-93134-4-2 and Adivasi, energy for a happy life ISBN 978-961-276-966-6; Handbook for the education of Ayurvedic masseurs / Ayurvedic therapists ISBN 978-961-283-013-7 and numerous articles on Ayurvedic medicine in international magazines, professional meetings and congresses.

When you visit a traditional Ayurvedic doctor (vaidya), be prepared to talk about yourself. Since Ayurveda emphasizes balance in all aspects of your life, the vaidya will not only examine your body, but will also gain extensive insight into your past and medical history, including questions about your daily diet, occupation and working conditions, exercise, and family and social relationships. Nadi (examination) Pariksha (diagnosis) generally consists of three parts:
- Darsha , observes the general physical condition of the client, observing their movements, speech, body structure, skin and eye color, facial lines and bone prominences, the shape of the nose, and the quality of the lips, hair, and nails.
- Sparsha , an ancient technique of diagnosing through the pulse (nadi), allows you to reach the root cause of health problems, rather than just analyzing the symptoms.
- Prashna , through a questionnaire/file, the vaidya asks the client questions about the symptoms, duration of the problem and progression of the disease. The vaidya also investigates the mental and psychological state of the client, through the influence of the planets at the time of birth through the spiritual realm of jyotish. Occasionally, certain laboratory tests are also necessary - especially in more severe "problems-state of vikruti". The client fills out a questionnaire/file, which also serves for the prescribed therapeutic program, i.e. the selected Ayurvedic processes (if the client decides to do so)!
Nadi Pariksha helps identify key symptoms to determine the appropriate Ayurvedic therapeutic program/process aimed at maintaining health in a healthy person or curing illness in an unhealthy one. After consultation and examination, the client receives a written diet program that is in accordance with their physical condition (vikruti) and the flow of body fluids, the three doshas (vata-pitta-kapha) and the five elements (water-earth-ether-fire-air). The diet program is also influenced or determined by the season (prana). Nadi Pariksha guides the person to embark on a life journey with more joy and health. If you have results/diagnosis from your doctor/specialist, please bring them with you. For a quality process, it is good to not drink coffee, tea or alcohol and not eat for three hours before the examination. Nadi Pariksha is not suitable for women who are menstruating (initial phase).

DAY 1 – DEHYDRATION:
We will prepare 6 recipes (nut and seed tortillas, crackers, bread, pizza dough, pancakes), and you will also get many additional recipes in the script: burgers, more crackers, breads, marinating mushrooms in a dehydrator, salty chips, sweet breads, sweet crackers, sweet chips, granola, fruit leather, 'popcorn', cookies, dehydrating spices, vegetables, fruits,...
DAY 2 – FERMENTATION, GERMINATION AND ADVANCED MIX:
We will prepare a total of 5 recipes: cheese/yogurt, sprouts, lasagna, pate (with bread/crackers prepared on day 1) and sushi, and you will find many additional recipes in the script.
All groceries , as well as tasting of prepared meals, are included in the price.
All participants will receive a script with a total of about 30 recipes .
