How and why does wine oxidize?
The wine is protected from oxidation in the barrel with sulfur dioxide and oil. After bottling, it is minimally exposed to oxygen and depending on the type, production and other factors, it has different shelf life. Some wines progress to even better quality by aging in the bottle, while others oxidize and spoil. After opening the bottle, the shelf life of all wines is significantly shortened because they have been exposed to oxygen to such an extent that oxygen negatively affects their taste, aroma and color. This happens because of a reaction that changes alcohol to acetaldehyde. In the case of white wines, this is shown by a change in color to brownish (locally we say that it has a high color) and a smell of dry fruit, and in red wines by a loss of lively and bright color.

In order to maintain the original taste and aroma of the wine, you must limit the access to oxygen as much as possible after opening the bottle. Sommeliers recommend using vacuum caps and a dedicated vacuum pump, with which you pump oxygen out of the bottle and create a vacuum. The procedure is the same as when storing food in vacuum containers and bags.
Vacuum wine stoppers prevent wine oxidation in a simple way
Using corks to store wine is quite simple. You need a vacuum cap for the bottle and a vacuum pump. If the stopper becomes dirty, wash it with a regular dishwashing detergent or in the dishwasher. Do not use rough sponges or strong cleaning agents to avoid damaging the seals.
