Ingredients for the dressing:
- 1 cup of fresh pineapple chopped into cubes
- 1/4 cup lime juice
- 3/4 cup coconut milk
- 1/4 teaspoon salt
- 1 tablespoon chia seeds
- 1 tablespoon coconut oil (melted)
Ingredients for the salad:
- 5 full cups of roughly chopped kale with the stems removed (it's better to use curly kale, but if you don't have it, you can use regular kale)
- 1 ripe mango, chopped into cubes
- 1/2 large banana, sliced
- 1/2 cup pineapple, chopped
- 1 tablespoon coconut flakes
Preparation:
- For the dressing - put all the ingredients in a blender and blend until smooth.
- Meanwhile, separate about 2/3 of the dressing and massage it into the chopped kale leaves and leave to marinate.
- When the kale has marinated and softened, add the remaining ingredients and the rest of the dressing and mix.
