Ingredients for the base:
- 1/2 cup of dates
- 1/3 cup walnuts (or other nuts of your choice)
- pinch of salt
Ingredients for the filling:
- 1 and 1/2 cups coconut flakes or 1/2 cup coconut butter
- 1 tablespoon maple syrup or 2 dates
- 2 tablespoons grated lemon zest
- 1/2 cup fresh lemon juice
- 1/2 teaspoon turmeric (for color)
Procedure:
In a food processor, mix all the ingredients for the base until you get a mixture that is sticky to the touch.
Line a square baking tray measuring approximately 20x20cm with baking paper and press the mixture evenly into the base. If the mixture sticks to your fingers, lightly moisten them with water.
For the filling, blend all ingredients in a blender or food processor until you get a smooth and uniform mixture.
If you want the filling to be sweeter, add a little more maple syrup or dates (remember that the base is sweet too!)
Pour the filling over the base and refrigerate to set for at least 1 hour. In the refrigerator, in a sealed container, the lemon bars can last up to a week.
If you want to make a larger quantity, you can freeze them and take them out of the freezer as needed.
