Ingredients for the salad:
· 1 zucchini, cut into small cubes
· 1 sour peeled apple, cut into small cubes
· 1 carrot, grated
· 1/2 cup raw, thawed peas
· 1/4 cup celery root or kohlrabi, diced
Mayonnaise:
· 70 g cashews soaked in water overnight
· juice of 1/2 lemon

· 1 tablespoon nutritional yeast
· 1 tablespoon onion powder

Preparation:
Cut all the salad ingredients into small cubes and mix in a bowl.
