Ingredients:
- 2 large cucumbers
- 3 ripe avocados
- 1/4 cup capers
- 1/2 teaspoon salt
- pepper
- 2 tablespoons lemon juice
- 1/4 cup fresh parsley, finely chopped
- 1/8 cup fresh dill, finely chopped
It's always good to have more cucumbers on hand because they can crack when cutting, so you can only use the middle, while cutting off the outer parts.
Cut the cucumbers into thin slices lengthwise.
Mash the avocado flesh in a bowl, add the other ingredients and mix everything well.
Spread each cucumber slice with avocado spread and roll up!
